What's For Dinner Wednesday

We were originally supposed to be having steak, corn pudding, baked beans and salad for dinner tonight but since yesterday was an uber stressful day I didn't make what I had planned for last night. Instead, I went to Toys R Us and Target with a couple friends. Such an amazing stress reliever. So tonight we will be having baked porkchops, mashed potatoes, green beans and salad.

For my porkchops I usually just coat them in breadcrumbs. Rinse them well, dip in an egg and then cover with breadcrumbs. Bake in a 400 degree preheated oven for about 30 minutes. So easy when you don't really want to make dinner (that is if the porkchops are already thawed LoL).

My mashed potatoes are so yummy. There are three secret ingredients. The first is cream cheese. Instead of using so much milk to make them creamy, use a bit of cream cheese. A half block to a full block depending on how many potatoes you are using. Mix that in with the potatoes, a half - one stick of butter (again depending on number of potatoes) and maybe 1/8 cup of milk (more if the potatoes still seem too dry). After you have the potatoes as smooth as you want them, you can then add the remaining secret ingredients which are seasoning salt and garlic salt. Shake in a decent amount and stir well. You will not be disappointed in these mashed potatoes. They are perfect... no need to add butter, extra salt or gravy :)
