What's For Dinner Wednesday?

Not sure why I do this blog on Wednesday when Wednesday is soccer practice night. LoL Anyways, tonight is going to be leftovers from the Pre-Thanksgiving dinner we had yesterday.

A while back I invited all of my playgroup to have a pre-thanksgiving dinner at my house since we are planning on going to SeaWorld on Thanksgiving day. I wanted to do something less traditional but I still wanted to have the dinner.

I didn't do turkey this year since that takes forever and my oven is tiny. I made a spiral sliced ham I got from Kroger though and man was it good. Also on the menu was corn pudding, mashed potatoes, sweet potatoes, green bean casserole, macaroni and cheese, and crescent rolls. For dessert we had chocolate cupcakes and a variety of pudding.

There was so much food for only two families that were here... us, and my friend from down the street. (Love ya, Tiff!) One friend forgot, another friend had some work training (and I think she is leaving us out to dry), another one never got back to me, and another one couldn't make it cause her kids had school yesterday. Oh well, it was fun anyways. We ate dinner, played some Mario Kart (until Adam shut it off on us) and then got our asses kicked by John in Trivial Pursuit Greatest Hits. I forgot all about Lexi's tumbling class last night, so we are gonna have to make that up sometime in the next two weeks. By the time I remembered I had already had a drink, she wasn't ready, it was 10 minutes til 7 and we were in the middle of a Trivial Pursuit. I was going to rush her off but I was reminded of the drink and I didn't think it would be a good idea to be speeding off to cheerleading with alcohol on my breathe.

There was so much food leftover it was crazy but that is where tonight's dinner comes in. We get to have all that yummy goodness all over again. Here are some recipes if you want to try any of the stuff.

Ham - From Kroger's meat section. Throw in a covered baking dish or roaster and bake at 250 degrees for two hours. It was so good I didn't even have to put the glaze on it that came with it.

Corn Pudding - 1 stick of butter, 1 box of Jiffy Corn Muffin mix, 1 egg, 1 can of cream style corn, 1 can of regular corn (drained) and 1 cup of sour cream. Melt butter and coat bottom of 9x13 pan with it. Then mix in all other ingredients. (You can premix them if you like and if you don't have an egg, don't worry, it will survive without it. Much better with the egg though). Spread mixture evenly. Bake for 50 min to an hour at 350 degrees.

Green Bean Casserole - 2 cans of green beans (drained), 1 can of cream of mushroom soup, 1/2 cup of milk, 1 tsp soy sauce, 1/8 tsp pepper, and 1 1/3 cup french fried onions. Mix first 5 ingredients with 2/3 cup of french fried onions. Bake for 25 minutes at 350 degrees. Stir and add the remainder of the onions to the top and bake an additional 5-10 minutes.

Mashed Potatoes (from a box) - Follow directions on the box, add extra butter and seasoned salt to taste (brought by Tiffany, cause I can't do it all LoL)

Mac & Cheese - Oooey gooey Kraft goodness. Yumm! (Tiffany brought this too).

Sweet Potatoes - 1 big can of yams, 1/2 cup brown sugar, a bunch of marshmallows. Drain yams and pour into a microwaveable dish, cover the top with brown sugar (more or less to your satisfaction) and top off with mini marshmallows (or do what i did and break some big ones in half and place beautifully on top). Throw the concoction into the microwave for 6-8 minutes to heat the yams and melt everything else.

Crescent Rolls - Nothing but Pillsbury! Roll and bake to a golden brown. Top with butter!

Pudding (also from a box) - Combine mix with two cups of milk and stir for two minutes, set in fridge for 5 minutes, enjoy!

Cupcakes (also guessing from a box) - Follow the directions, top with some yummy chocolate frosting. Make sure the get the extra moist mix... mmm, so good.
